Feel good Granola

Every week, normally on a Sunday morning when everyone is home, no football matches, no plans, just a chilled morning before heading out to walk the dog, I make a batch of homemade granola. I have always loved granola, yoghurt and fruit but used to spend a fortune buying it and never feeling fully satisfied. I then made my own following different recipes each time until I’d concocted my own to taste exactly how I want it - nutty, slightly spiced with a hint of sea salt and the occasional cluster of dates and raisins.

Everyone has their own preference (I know some people hate raisins!) so feel free to adapt to how you like and if I don’t have the exact nuts I just chuck in what I have and likewise with the peanut butter - any nut butter works well, it just needs to bind together.

Serves 6

  • 200g jumbo oats
  • 150g mixed nuts ( almonds, walnuts, cashews, pecans)

  • 100g mixed seeds (chia, pumpkin, sunflower)

  • 2tbsp melted coconut oil

  • 4tbsp honey or maple syrup

  • 1 tsp ground cinnamon

  • 1tsp ground ginger

  • 4 tbsp nut butter

  • 2tbsp raisins or dates (or both!)

  • Pinch of course sea salt

Preheat the oven to 160°C. Roughly chop the nuts and dates. Mix the oats, nuts and seeds in a large mixing bowl then add the melted coconut oil (boil gently on the hob for a minute to melt), honey, dates, cinnamon, ginger, nut butter and sea salt. Combine until all mixed up together. Transfer the mix to a baking tray lined with parchment paper until evenly spread and squish some together to create the clusters. Bake in the oven for approx. 30mins. At about 20 mins, if using raisins, then add them now so they don’t burn and give the tray a mix to check evenly baked. Remove from the oven, leave to cool and then transfer to a glass jar or container. Enjoy with greek yoghurt, fresh berries and a drizzle of extra honey. You will never buy shop bought granola again!
